Each wheel of our Blue Cheese is hand pierced on each side during the ripening process to allow the blue veining to develop. The cheese maker takes special care to assure the proper ripening conditions, and it receives constant attention. We age our wheels between 8-12 months.

Our Blue Cheese makes a fantastic addition to any cheeseboard. Its mellow tang compliments fresh fruits or roasted vegetables. It is excellent melted on top of a burger or steak, and compliments proteins. A fresh spinach salad with candied pecans with a raspberry vinaigrette is also a favorite. This Blue pairs well with bold red wines like Zinfandel, sweeter whites and full-flavored stouts.

Wheels average 6-8 pounds. Store unopened Blue Cheese at 33-36° for up to 45 days. Once opened, tightly wrap in cheese paper or plastic wrap and enjoy within 7 days.
