Born and raised in Dublin, our cheese maker, Lisa Jacobs fondly recalls savoring the unique taste of traditional Irish cheddar. Borrowing recipes and techniques from her favorite Irish cheese makers, she recreated this special cheese for you to enjoy! It’s sharpness hugs your tongue then releases into a rich, creamy texture with sweet, grassy notes evoking the lush, pastoral landscapes of the Emerald Isle.
We use raw milk in this traditional Irish farmstead recipe. Blocks of curd are stacked upon one another to assist in the whey drainage before hand milling the curd. Blocks are aged for a minimum of one year under our careful attention.
Pair our Irish Cheddar with a creamy stout or a robust porter. Its strong flavor makes it a great addition to baked goods (think biscuits, corn muffins,) and makes a mean mac n cheese! It is also a great topping to any apple pie.
