The curds are washed, pressed then carefully packed into round forms. The washing gives the cheese a sweeter note. Instead of a full wax, our Gouda is coated in a breathable glaze, allowing the cheese to mature gracefully as it ages while maintaining its moisture. The cheese maker skillfully guides the wheels through the affinage process for 12-18 months.

Light red or fruity white wines pair well with our aged Gouda. Beer drinkers savor this cheese with a good dark stout. Our Gouda compliments hazelnuts, pecans, pears and apples and makes a fantastic addition to any appetizer spread. Did we mention how amazingly this cheese melts? Try it on grilled cheese with apple slices, or grated over potatoes.

Wheels average 16 pounds.

Store unopened vacuum-sealed slices of Gouda at 33-36° for up to 45 days. Once opened, tightly wrap in cheese paper or plastic wrap and enjoy within 7 days.
